Durata fermentazione: le varietà sono state vinificate separatamente; la fermentazione e la macerazione sono avvenute in vasche di cemento per circa 25/30 giorni ad una temperatura controllata non superiore ai 28/30°
Fermentazione mallolatica: spontanea nel corso dell‘affinamento in vasche di cemento.
Affinamento: in barriques di rovere francese di 2° e 3° passaggio per almeno 10 mesi.
Vinificazione: macerazione e fermentazione in vasche di cemento per circa 20 giorni ad una temperatura controllata di 26-28 °C, a cui segue la conversione malolattica spontanea.
Temperatura di servizio: 18°C
Alla degustazione: Colore rosso rubino scuro e fitto. Al naso mora di rovo, ribes rosso, effluvi balsamici, speziatura di cardamomo e liquirizia con cenni finali di caffè e cioccolato.
Il gusto è vellutato, tannini elegantemente levigati ed una vena di acidità ben integrata nella struttura, presenta lunga persistenza.
Abbinamenti: eccellente come compagno di preparazioni complesse a base di carne e cacciagione e in occasione di convivi formali.

The 2016 Bolgheri Rosso Imeneo blend of Cabernet Sauvignon and Merlot offers pretty notes of cherry, dark berry and spice, converging over a midweight palate. The wine is compact and tight in structure, with enduring fruit flavors of bright primary fruit. Some 15,000 bottles were made. The wine is fermented in cement vats and ages in barrique for ten months.

The 2017 Bolgheri Rosso Imeneo is very thickly textured, with layers of black fruit topped by spice, cigar box and sweet tobacco. This 60/40 Merlot and Cabernet Sauvignon blend from Tuscany packs a lot of power and richness. Some 15,000 bottles were made.
